FERMENTIS SafAle™ T-58 Dry Yeast
FERMENTIS SafAle™ T-58 dry yeast is a Saccharomyces cerevisiae yeast strain specifically developed for the production of Belgian ales and saisons. This yeast strain gives the beer a characteristic fruity and spicy aroma with notes of clove, cinnamon and fruit.
FERMENTIS SafAle™ T-58 dry yeast has a high fermentation efficiency and a fast fermentation speed, and can produce beers with an alcohol percentage of up to 8% ABV. This yeast strain is optimized for fermentation temperatures between 15-25°C, but ideally the temperature should be kept around 20°C to achieve optimal fermentation speed and flavor profile.
FERMENTIS SafAle™ T-58 dry yeast can be used to brew a variety of Belgian ale and saison styles, including Belgian blond, Belgian dubbel, Belgian tripel, saison and witbier. This yeast strain gives the beer a complex flavor profile with fruity and spicy aromas, and contributes to a smooth and silky mouthfeel.
The dosage of FERMENTIS SafAle™ T-58 dry yeast depends on the type of beer and the desired alcohol percentage, but as a general guideline it is recommended to use between 50 and 80 grams of yeast per hectoliter of beer. The yeast should be hydrated before use by mixing it with a small amount of water at room temperature, and let it rest for 15-30 minutes before adding it to the beer mixture.
